Matcha Dalgona Latte Three Ways with ZenMatcha Tea
Matcha Dalgona with Egg Whites or Aquafaba
With the Dalgona coffee and matcha taking over the internet, I thought I would give this trendy and delicious matcha drink a try myself. Sweet, fluffy, and refreshing, this drink has become my new favorite, and I have enjoyed playing with different variations of the recipe while self quarantining with lots of extra time on my hands.
Using ZenMatcha Artisan Grade or Mixing Grade, I managed to tweak a few online recipes until I found a few that worked well, and were simple enough to recreate quickly.
Ingredients
- 1 egg white or 2 tbsp aquafaba. (Aquafaba is a vegan eggwhite alternative, and can be found in a can of chickpeas! It is the liquid left when you strain chickpeas from a can.)
- 1 tbsp granulated sugar (I prefer coconut sugar)
- 1/2 tbsp matcha (I use either ZenMatcha Mixing Grade or ZenMatcha Artisan Grade)
- Alternative milk such as oat, almond, soy, or hemp milk. Whichever you like best! (You can also enjoy this drink hot or over ice)
Directions
- Whisk egg white or aquafaba until white, fluffy, and mostly stiff. An electric hand mixer is definitely easier and faster, but this can be done by hand if you have the patience and arm strength!
(When using aquafaba, adding 1/4 tsp cream of tartar will get you firmer peaks in your mixture. It will work without it, but if you want the big stiff, fluffy peaks, add the cream of tartar.)
- Add sugar and continue to whisk until stiff peaks form and stick to your whisk.
- Sift in ZenMatcha and whisk until just mixed. If using an electric mixer, I recommend doing this at the slowest speed and for the least time possible so that your fluffy peaks don't fall!
(Do not add the matcha powder too soon! The tea leaves will weigh the mixture down too much to properly form stiff peaks. Also, make sure you sift them in to avoid clumps of matcha and to lessen the amount of time you have to whisk the matcha in.)
- Pour your milk of choice into a glass, add ice (if serving cold), and dollop your delicious Dalgona ZenMatcha on top! You can also sprinkle a bit of cinnamon or bee pollen on top for a nice garnish & flavor!

Alternative Matcha Dalgona Recipe with a Twist
Another recipe that I found that worked for me with a few tweaks omits the eggwhites or aquafaba, and adds collagen powder. This Dalgona Matcha turns out a bit denser & richer, but is still really good!
Ingredients:
- 2 tbsp hot water
- 2 tbsp granulated sugar
- 1 tbsp ZenMatcha (ZenMatcha Artisan Grade or Mixing Grade work well)
- 1 tbsp collagen powder. (I use Vital Proteins Collagen powder
Directions:
- Heat up the water. Water should always be just below boiling, or about 140 degrees when making matcha to prevent burning the tea.
- Add sugar, ZenMatcha & collagen powder to large bowl. The bigger the bowl, the less chance of splatter all over your kitchen if using an electric mixer. (Trust me, I learned the hard & messy way!)
- Add in hot water and whisk until color lightens to a light green and mixture thickens. This takes me about 5 minutes of whisking on the highest setting before the Dalgona magic happens!
- Pour your milk of choice into a glass, add ice (if serving cold), and dollop your delicious Dalgona ZenMatcha on top! You can also sprinkle a bit of cinnamon or bee pollen on top for a nice garnish & flavor!

*Eating any part of an egg raw can present a health and safety problem, as raw eggs do carry bacteria. If you’d rather not take the risk, buying eggs that have been pasteurized (look out for that on the label) or liquid egg whites in a carton, as these are always pasteurized, is another alternative.*
